A terroir-driven, author-cuisine restaurant in the town of Tabio, inspired by the landscapes, people and biodiversity of the Cundiboyacense highlands, built around a wood-fired oven with all bread baked in-house. It was profiled by El Tiempo and Revista Diners as a reason to travel to Tabio, with roughly 95 percent of its output made from scratch. It has operated since February 2023.
